Chocolate Oatmeal Cookies

This recipe is a weekly staple in my house! It tastes like a dessert but is so filled with wholesome and healthy ingredients that you can eat it or serve it to your children guilt-free. Crunchy on the outside and soft on the inside... these cookies never last an entire day!

INGREDIENTS

·       Two small, ripe bananas

·       ¼ cup unsweetened applesauce

·       1 tsp vanilla extract

·       1 Tbs unsweetened shredded coconut

·       2 Medjool dates, pitted

·       1 Tbs date syrup or maple syrup

·       1 Tbs cocoa powder

·       1 Tbs cacao nibs

·       1 ¼ cup instant oats

INSTRUCTIONS

Preheat oven to 350F.

Line baking sheet with parchment paper.

Combine all ingredients except cacao nibs and oats in blender and blend well. 

Combine mixture with oats and nibs in a mixing bowl until thoroughly combined and let sit for a few minutes to firm up.

Drop tablespoons of the batter onto baking sheet and flatten a bit with spoon.

Place in oven and cook for approximately 55 minutes.

Allow to cool for 5 minutes and enjoy!
